Why does Blue Pea Breeze change colour when I add lemon? The colour shift comes from natural pigments called anthocyanins in the blue pea flower. Add something acidic like lemon juice and the pH changes, so the brew turns from deep blue to purple. No dyes and no additives, just plant chemistry.
